8 oz. Banza Elbow Pasta
2 Garlic Cloves, minced
1 tbsp. Olive Oil
1 cup Almond milk
1 cup Dairy Free Sharp Cheddar, shredded
1/2 cup DF Mozzarella, shredded
2 tbsp. Nutritional Yeast
3-4 scoops SMOO Ovary Good Powder
1/2 tsp. Salt
1/2 tsp. Black Pepper
6-8 strips Bacon, preferably sugar-free
Thyme Leaves, to serve
Preheat oven to 400F. Line a rimmed baking sheet with parchment paper. Add the bacon in a single layer. Bake for 8-10 minutes, or until crispy and golden. Remove from pan to paper towels or a dish towel to pat out excess oils. Set aside.
Bring a large pot of salted water to a boil. Add the pasta and cook until al dente. Before draining, remove 1/2 cup pasta water to set aside.
In the same large pot, or using another pot, add the olive oil over medium high heat.
Add the minced garlic and saute for 1 minute, until fragrant.
Add the almond milk, nutritional yeast, shredded cheddar, shredded mozzarella, and ovary good powder. Whisk until smooth.
Stir in the salt and black pepper.
Bring to a boil, then simmer until thick, about 2-3 minutes.
Add in the cooked and drained pasta. Add the reserved past water gradually while stirring until desired thickness.
Enjoy warm with fresh thyme leaves and crumbled bacon!
